About Me

I have always been the kind of person that always has chocolate on hand. (Is that you, too? I knew I liked you.) When I’m not eating chocolate or talking about chocolate you can most likely find me outside enjoying the sunshine with my husband, our four kids and our corgi! We love hiking, riding bikes, swimming, playing games and eating meals in the backyard. I’ve got this red dirt in my soul, and feel so fortunate to live and work in this beautiful place, where my roots run deep.

What to Expect at a Chocolate Tasting

Chocolate, like fine wines, coffee, and cheese, contains its own set of unique flavor profiles. In these fun and engaging classes, you will taste EIGHT generously sized samples of craft chocolate bars from a wide variety of origins, allowing you the opportunity to taste the unique flavor profile of each.

We’ll also taste chocolate that showcases the creativity and culture of chocolate makers that have included additional flavors in their bars. I’ll teach you the basics of tasting, and will provide palate cleansers, including water, to enhance your tasting experience.

We’ll talk about the history of chocolate, the process of how its made from cacao beans to finished bar. You’ll learn more in one hour than you thought there was to know about chocolate, and you’ll never eat chocolate the same again!

Why Chocolate and Geography?

I graduated from California State University, Fullerton with a degree in Geography, but it wasn’t until I first found craft chocolate early in 2020 that I started to combine my deep love for chocolate with my abiding love for geography. Aside from finding it wildly delicious, I found that these small batch chocolate makers added a lot of geographical information as well, such as where they had sourced their cacao from and what makes the cacao from that specific region so unique. They shared about their concern for biodiversity and sustainable farming, as well as making sure cacao farmers are paid a living wage, to ensure the ethical treatment of those who grow the cacao that eventually becomes our favorite sweet. It’s all geography, and it’s never been more delicious!

Tips for enhancing your chocolate tasting experience

-Avoid wearing heavily scented perfumes or colognes. Aroma is an important component of flavor, so being able to concentrate on the smell of the chocolate alone will enhance your flavor detection.

-Come hungry enough to eat a full bar of chocolate, but not so hungry that you’re hurrying through the process – it’s a journey, not a destination. If you’re coming straight from dinner, try to give yourself enough time to clean the palate a little, as not to interfere with tasting.

-Be aware that many chocolates, though not all, are processed in factories that process nuts, milk and other allergens. If you have allergy concerns, please contact me ahead of time.
